Pork shoulder

Description

Pork shoulder is juicy, intensely flavored meat with a pink to ruby hue and distinct marbling of fat along with visible fibers and tendons. It has a full, slightly sweet taste with a hint of umami, and responds well to long braising, roasting, and smoking; when overcooked, it becomes tender and falls apart into fibers, making it ideal for roasts, stews, pulled pork, sausages, and ground fillings. Nutritionally, pork shoulder provides a lot of protein and B vitamins (especially B1, B3, B6, and B12), iron, and zinc, while also containing a significant amount of fat, including saturated fat. It is a filling ingredient that supports tissue regeneration, but it is important to control portions and cooking methods. Store in the refrigerator at a temperature of up to 4°C and consume within 2–3 days or freeze in an airtight container for 3–4 months; thaw slowly in the refrigerator and avoid refreezing.
