Description
Clarified ghee is a golden, clear fat with a slightly nutty, caramel flavor and the aroma of toasted butter. It is made by slowly heating butter and removing milk proteins and water, which gives it a longer shelf life and a high smoke point. Nutritionally, it is a concentrated source of calories and saturated fats, but it also contains fat-soluble vitamins (A, E, K2) and trace amounts of short-chain fatty acids like butyric acid; the clarification process removes most of the lactose and casein, making it easier for many people with milk intolerance to tolerate. In the kitchen, ghee is suitable for frying, braising, baking, and as a finishing touch to dishes, particularly in Asian cuisine, for seasoning and toasting spices. It should be stored in an airtight container in a cool, dark place; at room temperature, it stays fresh for several months, and in the refrigerator, it can last up to a year. Avoid introducing moisture and contaminants.
