Preparing the dough

In a large bowl, combine all the dry ingredients. Add the oats, all-purpose flour, baking powder, vanilla sugar, and a pinch of salt. If you are using cinnamon, add it now. Mix everything thoroughly with a whisk or spoon. This will ensure that the leavening agents are evenly distributed, and the pancakes will rise evenly.

Use a large bowl to avoid spilling ingredients while mixing. Thoroughly mixing the dry ingredients is key to achieving the perfect texture.

In a second, smaller bowl, prepare the wet ingredients. Crack the egg and beat it with a fork or a small whisk until the white and yolk combine into a uniform mixture. Then pour in the milk and mix briefly again.

Separately preparing the wet ingredients prevents excessive mixing of the batter, which could make the pancakes tough.

Pour the mixture of wet ingredients into the bowl with the dry ingredients. Using a whisk or rubber spatula, mix everything just until the ingredients are combined. Don't worry if there are small lumps in the batter - that's normal. Overmixing will cause the pancakes to be rubbery. Let the batter sit for 5-10 minutes so the oats can absorb the liquid and the batter thickens.

This is the most important step! Mix briefly and gently. Letting the dough rest is key to achieving the right thickness and fluffiness. During this time, you can prepare the fruits for decoration.

Frying and decoration

While the dough is resting, prepare the fruits. Wash the blueberries and grapes thoroughly, then dry them on a paper towel. Cut the grapes in half lengthwise. If you are using a banana, peel it and slice it into pieces about 0.5 cm thick. Arrange all the fruits on a small plate so they are ready for decorating.

Involve your child in preparing the fruit – it's a great fun and a way to learn. Make sure the fruit is well dried so it doesn't splatter water in the hot oil.

In a medium-sized non-stick skillet, heat about one tablespoon of oil over medium heat. When the oil is hot (you can check by dropping a bit of batter in – it should start sizzling immediately), spoon the batter into the skillet. For each hedgehog, form one larger oval patty (body) and one smaller round one (head). Fry for about 2-3 minutes on one side until bubbles appear on the surface and the bottom is golden brown. Then gently flip to the other side and fry for another 1-2 minutes.

Use a heavy-bottomed pan that distributes heat evenly. Do not pour too much batter at once to prevent the pancakes from sticking together. Fry on medium heat so that the pancakes do not burn on the outside while remaining raw on the inside.

Transfer the fried pancakes to a plate. Place a larger, oval pancake down, and on one end of it, place a smaller, round pancake so that it slightly overlaps. This way, you will create the body and head of the hedgehog.

Place the pancakes immediately after frying while they are still warm. You can prepare two plates and create hedgehogs for two children at the same time.

Now the fun part – decorating! On the smaller pancake (the head), place two blueberries as eyes and one on the very top as a nose. On the larger pancake (the body), arrange halved grapes or banana slices to create the hedgehog's spikes. Lay them in rows, slightly overlapping. Serve immediately, optionally drizzled with maple syrup.
