Preparing the dough
In a second, smaller bowl, prepare the wet ingredients. Crack the egg and beat it with a fork or a small whisk until the white and yolk combine into a uniform mixture. Then pour in the milk and mix briefly again.
Pour the mixture of wet ingredients into the bowl with the dry ingredients. Using a whisk or rubber spatula, mix everything just until the ingredients are combined. Don't worry if there are small lumps in the batter - that's normal. Overmixing will cause the pancakes to be rubbery. Frying and decoration
While the dough is resting, prepare the fruits. Wash the blueberries and grapes thoroughly, then dry them on a paper towel. Cut the grapes in half lengthwise. If you are using a banana, peel it and slice it into pieces about 0.5 cm thick. Arrange all the fruits on a small plate so they are ready for decorating.
In a medium-sized non-stick skillet, heat about one tablespoon of oil over medium heat. When the oil is hot (you can check by dropping a bit of batter in – it should start sizzling immediately), spoon the batter into the skillet. For each hedgehog, form one larger oval patty (body) and one smaller round one (head). Fry for about 2-3 minutes on one side until bubbles appear on the surface and the bottom is golden brown. Then gently flip to the other side and fry for another 1-2 minutes.
Transfer the fried pancakes to a plate. Place a larger, oval pancake down, and on one end of it, place a smaller, round pancake so that it slightly overlaps. This way, you will create the body and head of the hedgehog.
Now the fun part – decorating! On the smaller pancake (the head), place two blueberries as eyes and one on the very top as a nose. On the larger pancake (the body), arrange halved grapes or banana slices to create the hedgehog's spikes. Lay them in rows, slightly overlapping. Serve immediately, optionally drizzled with maple syrup.
