Description
Lime (for decoration, optional) is a small, light green fruit with a thin skin and an intense, aromatic scent. Its taste is distinctly sour with a subtle bitter note from the skin; a slice or zest adds freshness and an impressive finish to drinks, desserts, or fish dishes. From an aesthetic point of view, a lime with a vibrant color and smooth skin perfectly enhances the presentation of dishes. Lime is low in calories, a source of vitamin C, certain amounts of potassium, organic acids, and antioxidants that support immunity and iron absorption. It has a refreshing effect, stimulates digestion, and may counteract the oxidation of dishes. Store whole limes in the refrigerator in a closed bag or vegetable drawer, which will extend their freshness for several weeks; cut limes should be stored wrapped or in a container and used within 2–3 days. Juice and zest can also be frozen in portions.
