Sesame oil
Description
Sesame oil has a distinctive, nutty aroma and a golden-amber color; oil from roasted seeds is darker and more aromatic, while unrefined light sesame oil has a milder flavor and a lighter hue. It is thick, silky, and quickly enriches dishes with a subtle hint of toasted sesame. Nutritionally, it is rich in monounsaturated and polyunsaturated fatty acids, as well as vitamin E and lignan compounds (sesamin, sesamol) with antioxidant properties, which may support heart health and have anti-inflammatory effects when consumed in moderation. It is typically used as a finishing oil for salads, marinades, sauces, and Asian dishes, as well as for brief frying and stir-frying, with the roasted version being best suited for finishing. To preserve its aroma, store in a sealed, dark place away from heat sources; roasted oil should be kept in the refrigerator after opening and used within a few months.
