Description

Black olive paste, also known as tapenade, is a smooth, dark brown paste with a distinctly salty, briny, umami flavor and a slightly bitter note with an oily richness. It often contains capers, anchovies, and olive oil, which enhance its intensity and aroma. The texture can be creamy or grainy depending on the degree of grinding. Nutritionally, tapenade mainly provides monounsaturated fatty acids (oleic acid), vitamin E, iron, antioxidants, and fiber, which support heart health and have anti-inflammatory effects, but it is also high in sodium, so it's worth controlling portions. In the kitchen, it works great as a spread on bread and crostini, an addition to sandwiches, a sauce for pasta, an ingredient in dressings, marinades for fish and vegetables, and a flavor enhancer in Mediterranean dishes. Store in a tightly sealed jar in the refrigerator, preferably with a thin layer of olive oil on top, using homemade versions within 1–2 weeks; it can also be portioned and frozen.
