Description

Potassium bitartrate (cream of tartar) is a fine, white powder with a slightly acidic, tart flavor, lacking distinct sweetness. Chemically, it is a salt of tartaric acid (potassium hydrogen tartrate), easily soluble and odorless, used in small amounts as an acidity regulator. Nutritionally, it is almost calorie-free and does not provide fat or protein; however, it contains trace amounts of potassium, which plays a role in electrolyte balance, although it is not a significant source of this mineral in the diet. In the kitchen, potassium bitartrate stabilizes egg white foams, prevents sugar crystallization in syrups and confectionery, and when combined with baking soda, acts as a leavening agent. It is indispensable for meringues, caramels, and glazes. Store it tightly sealed in a dry, cool place, away from moisture and strong odors; when properly stored, it retains its properties for a long time.
