Description

Radicchio is an Italian variety of chicory with characteristic, round or elongated heads, intensely red-purple with distinct white veins, featuring a fresh, pleasant bitterness that is softened by cooking. It is low in calories, rich in fiber, vitamins (especially K and C), and folic acid, as well as minerals such as potassium and phenolic compounds and anthocyanins, which support digestion, vascular health, and have antioxidant properties. In the kitchen, radicchio works well raw in salads, as an addition to antipasti, and also grilled, roasted, or braised as an accent to meats, risotto, or pizza; it pairs excellently with blue cheese, nuts, citrus, olive oil, and balsamic vinegar. Store unwashed heads in the refrigerator, preferably wrapped in a paper towel and in a perforated bag, consuming within 5–14 days, and use cut pieces more quickly to avoid wilting and mold.
