Description

Bone marrow has a creamy, buttery-meaty consistency and a delicate, slightly salty flavor with a hint of umami; visually, it appears as a yellowish, fatty center in the cross-section of the bone, which becomes soft and glossy when roasted. Nutritionally, it is a calorie-dense source of unsaturated fats, fat-soluble vitamins (including A), as well as minerals and building blocks such as iron, phosphorus, and collagen amino acids; consumption in moderate amounts can support tissue regeneration and provide energy, although one should consider the saturated fat content.
