Description

Water for gelatin is a clear, colorless, and odorless liquid used to hydrate gelatin powder; it does not affect the taste of the prepared product, but allows for even dissolution and activation of gelatin proteins. As water itself does not provide calories or macronutrients, its nutritional value is negligible, but when combined with gelatin, it facilitates the use of collagen, which can support the intake of protein contained in the final dish and contribute to proper hydration. In the kitchen, it is mainly used for "soaking" gelatin before dissolving it in hot liquid and is suitable for desserts such as jellies, panna cotta, mousses, as well as for terrines and meat jellies. It is important to use drinking water, and prepared gelatin should be stored covered in the refrigerator; soaked gelatin is best used within 24 hours, and dissolved solutions should be used immediately for the best quality.
