Start by preparing the oven and the baking tray. Set the oven to a temperature of 175°C with the top and bottom heating function (without convection). Take a large, flat baking tray and line it with a sheet of baking paper. This will prevent the cookies from sticking to the tray and make it easy to remove them after baking. Make sure the paper covers the entire surface of the tray.

Preheating the oven is key for even baking. If you put the cookies in a cold oven, they may spread before they have a chance to bake. Use a standard large baking sheet from your oven's equipment.

In a large bowl, place all three main ingredients: 250g of peanut butter, 150g of fine brown sugar, and crack in one egg. Using a sturdy wooden spoon or silicone spatula, start mixing the ingredients. At first, the mixture will look lumpy, but continue mixing for about 2-3 minutes, making circular motions and scraping the mixture from the sides of the bowl. Mix until you achieve a smooth, uniform, and slightly glossy mixture with the consistency of thick cream.

It's best for the egg and peanut butter to be at room temperature - this will make it easier to combine them. If you want, you can use a hand mixer with mixing attachments, but do it on low speed and only until the ingredients are combined, so as not to aerate the mixture too much.

If you have decided to enhance the flavor of the cookies, now is the right time. Add one teaspoon (5g) of vanilla extract to the mixture. Gently mix with a spatula, making a few movements, just until the vanilla is evenly distributed in the mixture. Do not mix for too long.

This is an optional step, but highly recommended. Vanilla beautifully enhances the nutty flavor. You can also add a pinch of cinnamon or cardamom for a spicy note.

Now it's time to shape the cookies. Using a teaspoon or a small ice cream scoop, take portions of dough the size of a walnut (about 20-25g each). From each portion, form a smooth ball in your hands. Place the balls on the prepared baking sheet, leaving about 5 cm of space between them, as the cookies will spread slightly while baking.

The dough may be slightly sticky. If it sticks too much to your hands, you can lightly moisten it with water or sprinkle a little rice flour (or another gluten-free flour). Using an ice cream scoop ensures that all the cookies will be the same size and will bake at the same time.

Create a distinctive pattern on the cookies. Take a clean fork and gently flatten each ball of dough with its tines, creating lines. Then turn the fork 90 degrees and press down again, creating a grid pattern. The cookies should be about 1 cm thick. If you are using optional salt, sprinkle it on top of each cookie.

If the fork sticks to the dough, dip its tines in a bit of sugar before pressing each ball. The grid pattern is not just for decoration – it helps the cookies bake evenly, as they are quite dense.

Place the baking sheet with cookies in the preheated oven. Bake for 10-12 minutes. The cookies are ready when their edges are slightly browned and firm, while the center still looks a bit underbaked and is soft to the touch. Remove the baking sheet from the oven.

Be careful not to overbake the cookies! They will be very soft and crumbly right after taking them out of the oven, but they will harden as they cool. If you bake them until they are hard in the oven, they will become dry and hard as a rock once cooled. It's better to take them out a moment too early than too late.

After removing from the oven, leave the cookies on the hot baking sheet for about 5 minutes. This step is very important because during this time the cookies will 'set' and slightly harden, allowing them to be safely transferred. After 5 minutes, using a wide, flat spatula, very gently transfer each cookie to a wire rack to cool completely. Only after they have cooled completely will they reach their perfect, crispy-soft texture.

Do not try to remove the cookies from the baking sheet immediately after baking, as they are extremely delicate and will simply crumble. A cooling rack allows air circulation from below, which prevents the cookies from 'steaming' and keeps them crispy.
