First, prepare the fruits that are the base of our mousse. Cut the avocado in half lengthwise, rotating the knife around the pit. Twist both halves in opposite directions to separate them. Insert the knife blade into the pit and gently remove it. Scoop out the flesh with a large spoon, trying to get as close to the skin as possible. Peel the banana and break it into smaller pieces.

Use very ripe fruits! The avocado should be soft to the touch, and the banana should have brown spots on the skin. This is the key to achieving a perfectly creamy consistency and natural sweetness without the taste of raw avocado.

In a blender jar or food processor bowl, place all the base ingredients: scooped avocado flesh, broken banana, sifted cocoa powder (to avoid lumps), maple syrup, vanilla extract, and a pinch of salt.

It's best to use a high-speed blender or a food processor with an 'S' blade. This will ensure a perfectly smooth mixture. If you don't have a sieve, try to break up the cocoa lumps thoroughly with a fork before adding them to the other ingredients.

Start blending on low speed, then gradually increase to maximum speed. Blend for about 1-2 minutes until all ingredients are perfectly combined and the mixture becomes smooth, uniform, and shiny. During blending, take one or two breaks to scrape down the mixture from the sides of the container with a silicone spatula. This will ensure that all ingredients are evenly mixed.

Patience is key! Don't stop blending too early. The mixture is ready when there are absolutely no lumps of avocado or banana visible, and the consistency resembles thick pudding. If the mixture is too thick, this is the moment to add an optional tablespoon or two of plant-based milk.

Once you achieve a perfectly smooth consistency, taste the mousse. Use a clean teaspoon to assess the flavor. If you prefer sweeter desserts, you can add a little more maple syrup and briefly blend everything to combine the ingredients. The flavor of the mousse will continue to develop while cooling.

Remember that the perception of sweetness is individual. The flavor you taste now will be slightly more intense and chocolatey after cooling. Don't overdo it with additional sweetener at this stage.

Transfer the finished mousse evenly into 4 small bowls, glasses, or dessert cups. Smooth the surface with a spatula or the back of a spoon. Place the dessert in the refrigerator for at least 30 minutes. Chilling will cause the mousse to thicken slightly, and the flavors will meld, becoming deeper and more pronounced.

To prevent a 'skin' from forming on the surface of the mousse, you can cover each bowl with plastic wrap, making sure it touches the surface of the dessert directly. This will prevent oxidation and color change.

Just before serving, take the mousse out of the fridge. Decorate it as you wish. You can use fresh raspberries, which will add color and a tangy flavor, sprinkle with chopped nuts, coconut flakes, or grated dark chocolate. Serve immediately when it is pleasantly chilled.
