The infusion has a deep, slightly astringent taste of tea, balanced by the acidity of lemon and the natural sweetness of honey, creating a harmonious, aromatic composition. Served hot, in transparent glasses or porcelain cups, it looks elegant — lemon slices float on the surface, and the color of the infusion is amber-gold. Perfect as a warming drink after Christmas dinner or during conversations by the Christmas tree; it can be served solo or with a piece of gingerbread or poppy seed cake. Optionally, cinnamon or fresh ginger can be added for a deeper, spiced aroma.

Weigh and prepare all the ingredients: measure 800 ml of fresh water into the kettle, weigh 8 g of loose tea on the kitchen scale, weigh 60 g of honey and set aside in a bowl. Wash the lemon under running water and dry it. Prepare 4 cups or mugs and a tea strainer.

Use a kitchen scale to precisely measure the tea and honey. Also, prepare a teapot or a brewing jug (preferably ceramic or glass). A common mistake: not preparing the ingredients in advance - everything should be at hand.

Heating water

Pour 800 ml of water into the kettle and bring it to a boil. When the water starts boiling, remove the kettle for 10 seconds — the ideal brewing temperature for black tea is around 95-100°C, but a short pause prevents excessive bitterness.

Use an electric or gas kettle. If you have a kitchen thermometer, aim for 95°C. A common mistake: pouring boiling water over the leaves without waiting can result in a too bitter brew.

If you are using a teapot, pour a little hot water into it and swirl it around to warm the walls — pour out this water before adding the tea. A warm teapot helps maintain the temperature of the brew while steeping.

Use a glass or ceramic pitcher. This step is not necessary, but it improves the quality of the brew. A common mistake: skipping this step - then the infusion may cool down faster.

Brewing the infusion

Pour 8 g of loose leaf tea into a warmed teapot. Pour hot water (about 95-100°C) over the leaves and immediately cover the teapot with a lid. Steep for 4 minutes, no longer than 5 minutes — after 4 minutes, the infusion will be strong, aromatic, and not too bitter.

Use a tea strainer or a pot with a built-in filter. Set a timer (4 minutes) on the kitchen clock. Common mistake: brewing for less than 3 minutes will result in a brew that is too weak; longer than 6 minutes will make it too bitter.

While brewing, slice the lemon into thin slices (about 3-4 mm). Check for seeds and remove them. If you are using ginger, peel it thinly with a teaspoon and cut it into very thin slices; if you are using a cinnamon stick, prepare one stick for the pot.

Use a sharp knife and a cutting board. If you want it to look nice when served, cut 4 slices and save them for decoration. A common mistake: slices of lemon that are too thick will overpower the flavor.

After 4 minutes of brewing, remove the lid and strain the infusion through a sieve into a clean pitcher or directly into cups. Wait 30-60 seconds for the temperature to drop slightly (to about 70°C) — this way, the honey will retain some of its nutritional values and aroma. Add about 15 g of honey (1 tablespoon) to each cup and stir with a teaspoon until it dissolves. Place a slice of lemon in each cup; if you want a spicy aroma, add a prepared cinnamon stick or 2 slices of ginger to the pitcher beforehand.

Serve the tea hot — decorated with a slice of lemon and possibly a cinnamon stick in the cup. Serve with a teaspoon and a saucer. The drink tastes best immediately after preparation, when the aromas are most intense.
