Pour 800 ml of water into the kettle and bring it to a boil. When the water starts boiling, remove the kettle for 10 seconds — the ideal brewing temperature for black tea is around 95-100°C, but a short pause prevents excessive bitterness.

If you are using a teapot, pour a little hot water into it and swirl it around to warm the walls — pour out this water before adding the tea. A warm teapot helps maintain the temperature of the brew while steeping.
Brewing the infusion
Pour 8 g of loose leaf tea into a warmed teapot. Pour hot water (about 95-100°C) over the leaves and immediately cover the teapot with a lid. Steep for 4 minutes, no longer than 5 minutes — after 4 minutes, the infusion will be strong, aromatic, and not too bitter.
Preparation of toppings
While brewing, slice the lemon into thin slices (about 3-4 mm). Check for seeds and remove them. If you are using ginger, peel it thinly with a teaspoon and cut it into very thin slices; if you are using a cinnamon stick, prepare one stick for the pot.
Seasoning and sweetening
After 4 minutes of brewing, remove the lid and strain the infusion through a sieve into a clean pitcher or directly into cups. Add about 15 g of honey (1 tablespoon) to each cup and stir with a teaspoon until it dissolves. Serve the tea hot — decorated with a slice of lemon and possibly a cinnamon stick in the cup. Serve with a teaspoon and a saucer. The drink tastes best immediately after preparation, when the aromas are most intense.
