Boiled beets
Description
Boiled beets have a sweet-earthy flavor and a velvety, soft texture, along with an intense burgundy-purple color that adds vibrancy to dishes. They are low in calories, rich in fiber, folic acid, potassium, and manganese, as well as natural nitrates and betalains with antioxidant properties, which may support physical performance, lower blood pressure, aid digestion, and have anti-inflammatory effects. In the kitchen, boiled beets work great in salads with goat cheese or nuts, soups (e.g., borscht), as a side dish for roasts and tarts, in spreads, carpaccio, or pickled. They can be stored in an airtight container in the refrigerator for about 3–4 days; they can also be frozen, cut or blended, for up to 2–3 months. Before storing, remove the leaves and keep them away from strongly scented products.
