We combined it with crunchy, juicy cucumber, which provides electrolytes and enhances the feeling of refreshment, and fresh mint, adding a distinctive, cooling aroma. The whole is completed with lime juice, which not only balances the flavors with its citrus note but is also a rich source of vitamin C. The drink has a beautiful, light green color, is light, and its taste is the perfect balance between herbal freshness and delicate tartness. Ideal as an alternative to morning coffee, a post-workout drink, or a healthy snack throughout the day.
This is the most important step! Rinse the aloe leaf thoroughly under running water. Using a sharp knife, cut off the lower white part (about 2 cm) and the serrated edges on both sides of the leaf. Stand the leaf upright in a glass or jar for 10-15 minutes. You will see a yellow liquid flowing out - this is aloin, which has a bitter taste and a laxative effect. It should be discarded.

Use a sharp knife and a stable cutting board. Do not skip the step of draining the aloe - it is crucial for the flavor and health properties of the drink. If the leaf is very large, use only part of it.

After draining the aloin, lay the leaf flat on a cutting board. Using a knife or a vegetable peeler, carefully cut off the top, flat layer of the green skin, revealing the transparent flesh. Then, using a large spoon, gently scoop out all the gel-like flesh, scraping it from the bottom layer of the skin. Transfer the flesh to a strainer and rinse under cold running water to remove any remaining aloin.

The easiest way is to slide a spoon just under the flesh and move it along the leaf. Be gentle not to scrape off pieces of the green skin. The flesh will be very slippery - that's normal!

Thoroughly wash the cucumber and lime. Cut off the ends of the cucumber and slice it into thicker rounds or cubes - you don't need to peel it if it has a thin skin. Cut the lime in half and squeeze the juice into a small bowl. Wash the mint leaves and gently dry them with a paper towel.

To extract juice from the lime, you can use a manual citrus juicer to get as much as possible. If you don't have one, roll the lime on the countertop, pressing down firmly - this will make it easier to release the juice.
Mixing the elixir

In the blender jar, place all the prepared ingredients: rinsed aloe vera flesh, chopped cucumber, mint leaves. Pour in the coconut water and freshly squeezed lime juice. If you want the drink to be sweeter, add maple syrup now.

It's best to use a high-speed blender, which will ensure a perfectly smooth consistency. If you're using a weaker blender, you may need to blend for a longer time or strain the drink through a sieve.

Close the blender and blend everything on the highest speed for about 60-90 seconds. The drink should achieve a uniform, smooth consistency and a beautiful light green color. A delicate foam may appear on the surface.
Check the consistency after one minute. If there are still visible chunks of aloe or pieces of mint, blend for another 30 seconds. The finished elixir should be completely liquid.

In two tall glasses, place a few ice cubes (if using). Pour the freshly prepared elixir into the glasses. Garnish each serving with a sprig of fresh mint and a thin slice of lime or cucumber. Serve immediately.
