Palm sugar (gula melaka) is a traditional sweetener made from the sap of coconut or sugar palm flowers, available in the form of blocks, paste, or granules with a dark brown, sometimes slightly reddish color and a rich, caramel-toffee aroma with a hint of smokiness. Compared to refined sugar, it contains trace amounts of minerals such as iron, potassium, calcium, and zinc, as well as polyphenolic compounds; it may have a slightly lower glycemic index, but it is still a source of simple sugars, so it should be used in moderation.
