Description
Hokkaido pumpkin has a vibrant orange, smooth interior with a sweet-nutty, slightly creamy flavor and a thin, edible skin in shades of red or orange. The flesh is firm and moist, allowing it to maintain its structure when roasted or stewed. Nutritionally, it is low in calories, rich in beta-carotene (provitamin A), vitamin C, fiber, potassium, and B vitamins, as well as antioxidants, which support vision, immunity, skin health, and gut function. In the kitchen, hokkaido works well roasted, as a creamy soup, puree, addition to risotto, gnocchi, tarts, or curry; it pairs nicely with butter, cream, coconut milk, sage, thyme, garlic, cheeses, and meats. The whole pumpkin can be stored in a cool, dry, and ventilated place for several months, while cut pieces should be wrapped and stored in the refrigerator for 3–5 days or frozen after cooking or blending.
