Description

Hokkaido pumpkin has a vibrant orange, dense flesh with a sweet-nutty flavor and a delicate, edible skin, usually round in shape with dark orange skin. Its creamy texture works wonderfully in soups, purées, baking, casseroles, risottos, tarts, and fillings, as well as in smoothies; it pairs nicely with spices like curry, nutmeg, thyme, herbs, coconut milk, garlic, and cheesy additions. The flesh is low in calories, rich in fiber, beta-carotene (a precursor to vitamin A), vitamin C, potassium, and antioxidants, which support vision, immunity, digestion, and heart health. Store the whole pumpkin in a cool, dry, dark place for several weeks to several months, while cut flesh should be kept in the refrigerator tightly sealed for 3–5 days or portioned and frozen after blanching or baking for up to 3 months.
