Description

White mustard seeds are small, round seeds ranging in color from light yellow to light brown, with a mildly sweet flavor that is milder than black mustard, accompanied by a pleasant, warming, spicy note that reveals itself when crushed or heated. From a nutritional standpoint, the seeds are low in calories and provide fiber, plant protein, healthy fats, and minerals such as magnesium, calcium, and selenium; they also contain sulfur compounds (glucosinolates) with potential anti-inflammatory and digestive-supporting properties. Culinary uses are very broad: they are excellent for making mustard, marinades, dressings, seasoning meats, fish, legumes, and cabbage, as well as for pickling cucumbers and other fermented foods. To preserve their full aroma, store the seeds in an airtight container in a dry, cool, and dark place; whole seeds retain freshness for up to two years, while ground seeds quickly lose their aroma and should be stored for a shorter period.
