Description

Green cardamom consists of small, bright green pods containing tiny black seeds with an intense, fresh citrus, slightly floral, and resinous aroma, with hints of camphor and sweetness. It is rich in essential oils (including cineole, terpineol), antioxidants, and trace amounts of minerals, which contribute to its properties that support digestion, have anti-inflammatory and antiseptic effects; it is also traditionally used to freshen breath and alleviate stomach ailments. In the kitchen, green cardamom pairs perfectly with both sweet and savory dishes — chai, coffee, desserts, baked goods, rice (biryani), stews, and spice blends. The most intense aroma is released when used whole or freshly ground. Store whole pods in an airtight, opaque container in a cool, dry place; ground cardamom loses its aroma quickly, so it's best to grind just before use.
