Description

Chorizo sausage is an intense, red-orange product with a distinct smoky and spicy flavor thanks to paprika (pimentón) and often garlic; the texture can be coarsely ground and aromatic, ranging from mild Spanish versions to spicier Mexican varieties, fresh or dried. It works excellently in one-pot dishes, paella, tapas, fried eggs, sandwiches, and as an addition to soups, stews, or pizza, where it brings a deep, spicy character. Nutritionally, chorizo is a good source of protein, iron, and B vitamins, but it is also high in saturated fats and sodium, so it is advisable to consume it in moderation or choose leaner versions. Fresh chorizo should be stored in the refrigerator and used within 1–2 days or, after cooking, within 3–4 days; dried, cured sausage lasts longer in the cold, and for longer storage, it can be frozen (for up to about 2 months), thawing in the refrigerator.
