Butter (for caramel)
Description
Butter (for caramel) is a smooth, creamy butter with a light cream color that, when added to caramel, gives a velvety, slightly nutty and buttery flavor, as well as a glossy, thick consistency. High-quality butter, usually unsalted, works best as it allows for precise seasoning of the sweet note and stabilizes the emulsion of sugar and cream. It is typically used in caramels, sauces, toffees, cake fillings, and as a finishing touch for ice creams and fruit desserts. Nutritionally, butter is a concentrated source of fat, including saturated fats, and fat-soluble vitamins A, D, E, and K; it provides energy but should be consumed in moderation. It is stored in the refrigerator in an airtight container, and for longer storage, it can be frozen. Before using it for caramel, it is advisable to bring it to room temperature to blend more easily with the hot mixture.
