Description

Sesame seeds are small, flat, oval grains that come in shades of cream, white, and black, with a slightly nutty, mildly sweet flavor and a pleasant crunch that is enhanced by toasting. They are a source of healthy monounsaturated and polyunsaturated fats, plant protein, fiber, and minerals, especially calcium, magnesium, iron, and zinc; they also contain lignans (sesamin, sesamol) with antioxidant properties. Sesame seeds are suitable for bread, baguettes and rolls, salads, Asian and Middle Eastern dishes, tahini sauce, hummus, and sweet halva; toasting brings out their aroma.
