Description

Dried porcini mushrooms (optional) have an intense, earthy, umami flavor with nutty notes, and a dark brown, wrinkled appearance and a dense, dry texture that quickly regains its meatiness after soaking. They are an excellent flavor concentrate — just a few pieces are enough to enrich a dish. Nutritionally, they are a low-calorie product rich in fiber, plant protein, B vitamins, and minerals such as potassium and selenium; they contain antioxidants and polysaccharides that support immunity and gut health. They are typically used in risottos, soups, sauces, stews, pasta, and fillings, and the soaking water is a valuable broth that adds depth of flavor. They should be stored in a sealed, dry, and cool place, away from moisture and light; under these conditions, they retain their aroma for many months. To restore their unique aroma, soak in warm water for 20–30 minutes and use the liquid as well.
