Description

Frozen bay boletes are forest mushrooms with dark brown caps and a firm, meaty texture, retaining a distinct, slightly nutty and earthy aroma after thawing. They are usually blanched before freezing, which helps maintain their flavor and color, although they may release more water than fresh specimens once defrosted. They are low in calories, rich in plant protein, fiber, B vitamins, and minerals such as potassium, selenium, and zinc, as well as antioxidants that support the immune system. They work well in soups, sauces, risottos, dumplings, one-pot dishes, and as an addition to meats or vegetables, pairing nicely with onions, cream, and marjoram. Store them in the freezer in airtight containers at -18°C, preferably use within 6–12 months; after thawing, drain excess water, use within 24–48 hours, and do not refreeze.
