Description

Fontina cheese is an Italian cow's milk cheese with a semi-soft consistency, creamy texture, and light yellow rind with small holes; it stands out for its buttery-nutty sweetness with delicate earthy-mushroom notes and melts well, creating a smooth, elastic mass. Nutritionally, fontina provides high-quality protein, calcium, phosphorus, and vitamins A and B12, which support bone health, nerve functions, and a feeling of fullness, although it should be consumed in moderation due to its saturated fat and salt content. In the kitchen, fontina works best where good melting properties are important: fondue, casseroles, risotto, sandwiches, omelets, or pizzas, as well as being a component of a cheese board. Store it in the refrigerator wrapped in parchment paper or in a special cheese box, at a temperature of 2–6°C, away from strong odors; before serving, it is advisable to take it out for 20–30 minutes to regain its full aroma.
