Description

Aged hard cheese, such as Gruyère or Parmesan, has an intense, nutty-umami flavor with a distinct saltiness and a crumbly, grainy texture, along with a golden-straw color. The aroma is concentrated; the longer it ages, the more complex and pronounced it becomes. Nutritionally, it provides concentrated protein, calcium, phosphorus, and vitamins A and B12, supporting bone health, tissue repair, and a feeling of fullness; however, one should consider the content of saturated fats and salt. Aged cheeses often contain little lactose, which may make them easier to tolerate for sensitive individuals.
