Orange zest
Description
Orange zest has an intense, fresh citrus aroma with bittersweet notes; the outer layer is smooth and shiny, while the white part (albedo) is more bitter and soft. It contains vitamin C, fiber (pectins), flavonoids (e.g., hesperidin), and essential oils rich in limonene, which exhibit antioxidant and anti-inflammatory properties, support digestion, and help in better utilization of nutrients while being low in calories. In the kitchen, zest works well in baked goods, desserts, marinades, sauces, beverages, and meat dishes, where it enhances flavor and adds freshness; it can be used grated, in strips, or candied. Store washed and dried zest in an airtight container in the refrigerator for 1–2 weeks, or alternatively, air-dry it or portion and freeze it for 3–6 months; before use, remove wax and impurities.
