Chimichurri sauce
Description
Chimichurri sauce is a green, aromatic sauce with a fresh, herbal flavor and a distinct hint of garlic, vinegar, and oil, with a somewhat uneven, slightly chunky consistency containing chopped parsley (sometimes cilantro), chili, and spices. Its intensity depends on the proportions of herbs and vinegar, but it generally combines a sour-spicy note with the smoothness of oil, making it a vibrant addition to the plate. Nutritionally, chimichurri provides antioxidants and vitamins from green herbs, primarily vitamins K and C, as well as healthy monounsaturated fats from oil, while being relatively low in calories in small portions; however, it is worth being cautious about the salt content. The sauce pairs perfectly with grilled and roasted meats, fish, vegetables, and can be used as a marinade or dip. Store in an airtight container in the refrigerator for about one to two weeks, stirring before serving; it can also be portioned and frozen (ice cubes) for 2–3 months.
