Description

Fresh tarragon is a delicate, lanceolate herb with an intense, anise-like liqueur aroma and light green leaves that add a distinctive, slightly sweet flavor to dishes. It is low in calories, provides vitamins A, C, and K, as well as minerals such as iron and calcium, and the essential oils and antioxidants it contains support digestion and exhibit mild anti-inflammatory and antibacterial properties. In the kitchen, tarragon pairs wonderfully with poultry, fish, eggs, sauces (especially béarnaise), dressings, herb butter, and vinegars — it is best to add it at the end of cooking to preserve its aroma. For storage, it is advisable to wrap the sprigs in a damp paper towel and keep them in the refrigerator or place them in a jar of water, changing the water every few days; for longer storage, it can be frozen in oil in the form of cubes.
