Description
Fresh tuna (steak) has an intense, brick-red color and a firm, meaty texture with a slightly salty, umami flavor that can be buttery in fat-rich versions. Its aroma is subtle, making it pair well with bold spices and sauces. Nutritionally, tuna provides high-quality protein, valuable omega-3 fatty acids, B vitamins (especially B12), as well as selenium and vitamin D, which support heart health, brain function, and metabolism; due to potential mercury content, it is advisable to consume it in moderation, especially for pregnant women and small children. In the kitchen, tuna steaks are suitable for quick grilling, frying over high heat (crudo, tataki), serving in salads, sandwiches, or as a raw ingredient in sushi and carpaccio. Fresh tuna is best stored chilled at a temperature close to 0–2°C and consumed within 24–48 hours, or it can be tightly wrapped and frozen at −18°C for 2–3 months.
