Preparation steps

Preparation of ingredients for the skewers

1

Start by preparing the vegetables. Place the cherry tomatoes in a colander and wash them thoroughly under running cold water. Then spread them out on a paper towel and gently dry them to avoid moisture. Wash the cucumber as well, dry it, and cut off the ends. Do not peel it, as this will make the skewers more colorful.

Ingredients: Cherry tomatoes, Greenhouse cucumber
Use a large cutting board and a sharp chef's knife. Thoroughly drying the ingredients is important to prevent the skewers from 'sweating' on the plate and to maintain an appetizing appearance.
2

Cut the ingredients. Cut the Gouda cheese into even cubes with a side of about 1.5 cm. Cut the kabanos into pieces 2-3 cm long. Cut the cucumber into thick slices, about 1 cm thick.

Ingredients: Block gouda cheese, Pork kabanosy, Greenhouse cucumber
Try to make all pieces of cheese and kabanos similar in size. This will make it easier to skewer them on toothpicks and will make the wreath look more aesthetically pleasing. Use a ruler if you want to be very precise!
3

Drain the cheeses and olives. Remove the mini mozzarella balls from the brine and transfer them to a sieve to drain well. You can also pat them dry with a paper towel. Do the same with the green olives – drain them thoroughly from the brine.

Ingredients: Mini mozzarella balls, Green olives, pitted
This is a key step to avoid excess liquid on the platter. Wet ingredients can cause the skewers to slide and release water, which will ruin the visual effect.

Preparation of garlic-herb sauce

4

Prepare the sauce base. In a small bowl, combine thick Greek yogurt and mayonnaise. Using a small whisk or spoon, mix both ingredients until smooth and uniform without lumps.

Ingredients: Thick Greek yogurt, Mayonnaise
Use a bowl in which you will finally serve the sauce – it will save you from doing extra dishes. Thoroughly mixing the yogurt with the mayonnaise is the key to a creamy dip consistency.
5

Add the flavors. Peel the garlic cloves and press them through a garlic press directly into the bowl with the sauce. If you don't have a press, grate them on the finest grater or chop them very finely with a knife. Rinse the fresh dill, dry it, and chop it very finely, then add it to the sauce.

Ingredients: Garlic, Fresh dill
Pressing garlic through a press releases the most flavor and aroma. When chopping dill, try to do it just before adding it to the sauce to preserve its freshness.
6

Season and mix the sauce. Season everything with salt and freshly ground black pepper. Thoroughly mix all the ingredients until the flavors combine. Taste and add more salt or pepper if needed. Place the bowl of sauce in the refrigerator for at least 15 minutes to let the flavors meld.

Ingredients: Salt, Pieprz czarny świeżo mielony
Chilling the sauce will make it thicker and more flavorful. Always taste the dip before serving – balancing the flavors is key.

Assembling and arranging the wreath

7

Assemble the skewers. Prepare long toothpicks or skewers. Thread the prepared ingredients onto them in any order, trying to create colorful and appetizing compositions. Example order: olive, cube of gouda cheese, piece of kabanos, cherry tomato, slice of cucumber, ball of mozzarella.

Ingredients: Pork kabanosy, Block gouda cheese, Cherry tomatoes, Mini mozzarella balls, Green olives, pitted, Greenhouse cucumber
Prepare about 20-25 skewers. Do not pack the ingredients too tightly so that each one is clearly visible. Have fun with the composition, creating different variations on each skewer.
8

Arrange the wreath. In the center of a large, round plate, platter, or wooden board, place a bowl with the chilled sauce. Around the bowl, arrange the prepared skewers, one next to the other, forming the shape of a wreath. Position them so that their ends are facing outward, like rays of the sun.

The best effect is achieved on a plate with a diameter of at least 35-40 cm. Make sure the skewers are stable and do not tip over.
9

Decorate your creation. Insert sprigs of fresh rosemary between the skewers – they will mimic needles and add a wonderful aroma. Additionally, if using, scatter a few fresh cranberries on the wreath, which will look like festive berries. Serve immediately.

Ingredients: Fresh rosemary, Fresh cranberry
Decoration is the 'dot over the i'. Don't overdo the amount of additions so as not to overwhelm the main composition. The goal is to subtly emphasize the festive character of the dish.

Fun Fact

💡

Kabanosy are a traditional Polish, thin, long, and dry sausage, whose name comes from the word 'kaban', meaning a young pig fattened specifically with potatoes in ancient Poland. Their recipe and smoking method made them durable and ideal as provisions for hunters and travelers.

Tips

🍽️ Serving

Serve the wreath chilled, preferably right after preparation, so that the vegetables remain as crunchy as possible. You can experiment with the ingredients by adding, for example, pickled mushrooms, gherkins, cubes of feta cheese, grapes, or pieces of bell pepper in various colors. For variety, you can prepare two types of sauces, such as garlic and thousand island.

🥡 Storage

The dish tastes best when fresh. If you need to prepare it in advance, assemble the skewers, place them on a plate, tightly wrap with plastic wrap, and store in the refrigerator for a maximum of 4-5 hours. Store the sauce separately in a closed container. Decorate the wreath just before serving.
