The wreath is extremely easy to prepare, requires no cooking or baking, and the final effect is worthy of professional catering. Cut the ingredients. Cut the Gouda cheese into even cubes with a side of about 1.5 cm. Cut the kabanos into pieces 2-3 cm long. Cut the cucumber into thick slices, about 1 cm thick.
Drain the cheeses and olives. Remove the mini mozzarella balls from the brine and transfer them to a sieve to drain well. You can also pat them dry with a paper towel. Do the same with the green olives – drain them thoroughly from the brine.
Preparation of garlic-herb sauce
Prepare the sauce base. In a small bowl, combine thick Greek yogurt and mayonnaise. Using a small whisk or spoon, mix both ingredients until smooth and uniform without lumps.
Add the flavors. Peel the garlic cloves and press them through a garlic press directly into the bowl with the sauce. If you don't have a press, grate them on the finest grater or chop them very finely with a knife. Rinse the fresh dill, dry it, and chop it very finely, then add it to the sauce.
Season and mix the sauce. Season everything with salt and freshly ground black pepper. Thoroughly mix all the ingredients until the flavors combine. Taste and add more salt or pepper if needed. Place the bowl of sauce in the refrigerator for at least 15 minutes to let the flavors meld.
Assembling and arranging the wreath
Assemble the skewers. Prepare long toothpicks or skewers. Thread the prepared ingredients onto them in any order, trying to create colorful and appetizing compositions. Example order: olive, cube of gouda cheese, piece of kabanos, cherry tomato, slice of cucumber, ball of mozzarella.
Arrange the wreath. In the center of a large, round plate, platter, or wooden board, place a bowl with the chilled sauce. Around the bowl, arrange the prepared skewers, one next to the other, forming the shape of a wreath. Position them so that their ends are facing outward, like rays of the sun.
Decorate your creation. Insert sprigs of fresh rosemary between the skewers – they will mimic needles and add a wonderful aroma. Additionally, if using, scatter a few fresh cranberries on the wreath, which will look like festive berries. Serve immediately.
