Preparation steps

Start by preparing the glass in which you will serve the cocktail. This is a little secret that makes a big difference! Place two glasses (preferably coupe, margarita, or wide wine glasses) in the freezer for at least 10-15 minutes. This way, the cocktail will maintain its perfectly frozen consistency for longer and won't melt as quickly.

If you don't have space in the freezer, you can fill the glasses with ice cubes and a little cold water, then set them aside for a few minutes. Before pouring the cocktail, pour out the water and ice, and quickly dry the glass with a paper towel.

Prepare the remaining ingredients. Cut the lime in half. To extract as much juice as possible, roll it on the countertop, pressing down firmly with your hand before cutting. Squeeze out the juice, being careful not to let any seeds fall in. Measure out 30 ml of juice. Gently rinse the basil leaves under cold water and dry them on a paper towel.

Use a citrus juicer to get the maximum amount of juice effortlessly. If you are squeezing by hand, insert a fork into the half of the lime and twist it while squeezing the fruit – this will help release more juice.

Time for magic, which means blending! Pour the ingredients into the blender jar in the right order to make it easier for the device. Start with the liquids: pour in the white rum, freshly squeezed lime juice, and agave syrup. Next, add the basil leaves, and finally, add the frozen raspberries and ice cubes.

The best option is a high-power blender that can handle crushing ice and frozen fruits. Adding liquids to the bottom of the jar ensures that the blades have something to 'grab' onto right away, creating a whirlpool that pulls in the tougher ingredients.

Close the blender tightly and start blending. First, use the 'pulse' function a few times to roughly crush the ice and fruit. Then, turn the blender to the highest speed and blend for about 30-60 seconds until you achieve a perfectly smooth, thick, and uniform mixture with a sorbet-like consistency (known as slushy). There should be no ice chunks or pieces of fruit in it.

If the blender has trouble with this and the ingredients are sticking to the walls, turn it off and use a silicone spatula or tamper (if included) to push the mixture down towards the blades. Do not blend for too long to prevent the smoothie from heating up from the motor's operation.

Act quickly! Take the chilled glasses out of the freezer. Carefully pour the thick cocktail into them, filling them almost to the brim. If you're using the optional ingredient, now is the time: you can add a splash (about 50 ml per serving) of Prosecco or sparkling water to give the drink some lightness and bubbles. Finally, garnish each serving with a few fresh raspberries and a sprig of basil. Serve immediately!
