Star anise (ground)
Description
Ground star anise is a fine, brown powder with an intense, sweet-spicy aroma featuring distinct notes of licorice and peppery warmth; it provides a concentrated, warming flavor that can easily dominate a dish, so it should be used sparingly. Nutritionally, it is low in calories and exerts its effects mainly due to the essential oil anethole, which has antioxidant, anti-inflammatory, and antibacterial properties, and it is traditionally used as a digestive aid, alleviating bloating and acting as an expectorant. In the kitchen, it works well in Asian dishes (e.g., five-spice), braised meats, marinades, spiced cakes, mulled wine, and desserts, adding depth and sweetness with a spiced note. Store in a tightly sealed container in a cool, dark, and dry place; ground spices lose their aroma faster than whole fruits, so it is best to use them within about 6–12 months.
