Description
Asafetida (hing) is a resinous extract from the Ferula plant with an intense, sulfurous smell when raw, which softens to a flavor reminiscent of garlic and onion when fried in fat. It ranges in color from yellow-brown to black depending on the form (resin, powder with added flour). It is used in very small amounts—a pinch is enough to add depth and umami to vegetarian dishes. Nutritionally, hing does not contribute significant calories, but it contains phenolic compounds and terpenes that are believed to aid digestion and reduce bloating. Traditionally, it is used as a carminative and antibacterial agent; pregnant individuals or those taking medications should consult a doctor before use. It is typically added to lentil, bean, vegetable, and pickle dishes, always sautéed in fat to release its aroma. Store in a sealed, dry, and dark place, preferably in a small glass jar, away from moisture.
