White cabbage
Description
White cabbage is a firm, round vegetable head with light green, dense leaves and a crunchy texture. Its flavor is mild, slightly sweet with a hint of spiciness, making it a versatile ingredient both raw and cooked. Nutritionally, white cabbage is low in calories, rich in fiber, vitamins C and K, and folic acid, as well as sulfur compounds with anti-inflammatory and antioxidant properties. In the kitchen, it works well in salads and coleslaws, fermented as a source of probiotics, stewed in soups and stews, stuffed in cabbage rolls, or quickly stir-fried. Store it whole, unwashed, in the refrigerator in a cool, humid drawer or wrapped in perforated plastic; once cut, tightly wrap it and use within a few days, or preserve it by fermenting or blanching and freezing.
