Description

Whipped cream (prepared in a siphon or whipped by hand) is a light, creamy emulsion with a subtly sweet, milky flavor and a fluffy, snow-white or slightly creamy color with characteristic stiff peaks. Its texture is smooth and glossy, easily absorbing the flavors of added sugars, extracts, or liqueurs. Nutritionally, whipped cream is a source of energy and fats, mainly saturated; it also provides fat-soluble vitamins (A, D in enriched cream) as well as calcium and a small amount of protein. In moderate amounts, it can increase the feeling of fullness and enhance meals, but due to its high calorie content, it should be consumed in moderation. It is most commonly used as an addition to desserts, cakes, pancakes, fruits, and coffee, as well as for cold creams and decorations; the siphon allows for light, stable foaming and flavoring. It should be stored in the refrigerator (0–4°C); freshly whipped cream is best used within 24–48 hours, and the siphon and nozzles should be thoroughly cleaned after use; long-term freezing is not recommended as it loses its structure.
