Description

King oyster mushrooms (Pleurotus eryngii) have a massive, meaty stem and a relatively small cap in shades of cream to brown, with a dense, juicy texture and a delicate, slightly nutty and umami flavor reminiscent of vegetable broth. They are valued for their firm texture, which takes on a "meaty" note and a pleasant crunch at the edges after cooking. Nutritionally, they are low in calories, rich in protein and fiber, providing B vitamins, potassium, selenium, and antioxidants; they may support the immune system, positively affect lipid profiles, and regulate glycemia. In the kitchen, they are great for grilling, frying, baking, and stewing, making an excellent meat substitute in patties, "steaks" made from mushrooms, Asian dishes, and creamy sauces, and they absorb marinades and flavors well.
