Brown mushroom (portobello)
Description
Brown mushroom (portobello) is characterized by a large, flat cap with a dark brown skin and firm, meaty flesh; the flavor is deeply mushroomy, slightly nutty, with an intense texture that makes it an ideal meat substitute. Nutritionally, it is a low-calorie, low-fat ingredient that provides plant protein, fiber, B vitamins (especially niacin and riboflavin), selenium, potassium, and copper; it also contains antioxidants (ergothioneine) and beta-glucans, which support immunity, have anti-inflammatory effects, and positively impact heart health and weight management. In the kitchen, portobello is great for grilling, baking, stuffing, stewing, and as a base for veggie burgers, as well as for sauces, soups, and salads. Store in the refrigerator loosely in a paper bag or container, avoid plastic packaging, do not wash before storing, use within 3–5 days; pre-cooked mushrooms can also be frozen or marinated.
