Description

Dried porcini mushrooms are a concentrated form of noble porcini mushrooms, with a deep, intensely nutty-earthy flavor and a strong umami aroma. They appear as dark brown, wrinkled pieces of caps and stems, usually tough and leathery, which regain a meaty texture and depth of flavor after soaking. Nutritionally, dried porcini mushrooms provide protein, fiber, B vitamins, and minerals such as potassium, iron, and selenium, as well as bioactive compounds (beta-glucans) that support immunity and metabolic health. In the kitchen, they are great for risottos, soups, sauces, ragù, pasta, and broths, where they enhance flavor; they can also be ground into an aromatic spice. Store in an airtight container in a dry, cool, and dark place, away from moisture; after opening, vacuum sealing or long-term storage in the freezer works well, and soak just before use, saving the soaking water as essence.
