Broccoli
Description
Broccoli is a compact, green vegetable with characteristic, tree-like florets and a slightly bitter, mildly nutty flavor that softens when cooked. Its firm structure holds up well, and its intense color indicates freshness and a high chlorophyll content. Broccoli is rich in vitamins C, K, and folic acid, fiber, and minerals, as well as bioactive compounds like sulforaphane, which has anti-inflammatory and anti-cancer properties. Regular consumption supports immunity, bone health, and digestion, and helps in glycemic control. In the kitchen, broccoli works well steamed, blanched, roasted, or stir-fried, and pairs perfectly with garlic, lemon, cheese, pasta, soups, and salads. Store it unwashed in a cool drawer of the refrigerator in a perforated bag, ideally to be consumed within 3–5 days; for longer storage, blanch and freeze.
