Description
Shortcrust is a classic, buttery pastry with a slightly sweet or neutral flavor and a characteristic crumbly, golden structure; once baked, it forms a firm yet crumbly crust that breaks pleasantly. Nutritionally, it mainly provides energy in the form of carbohydrates and fats, and contains small amounts of protein and micronutrients from butter or eggs; due to its high fat content, it is calorie-dense but can be a source of fat-soluble vitamins and energy needed during intense exertion. In the kitchen, it works well for tarts, mazurkas, crumb bases for cheesecakes, cookies, and savory quiches; it pairs well with fruits, creams, and cheeses. It can be stored tightly wrapped in the refrigerator for a few days or frozen for 1–2 months; it is advisable to protect it from moisture and to blind bake before filling to maintain its crispness.
