Description

Sugar (mass) is a white, crystalline powder with a sweet, pure taste and neutral aroma, easily soluble in water. In the kitchen, it mainly appears as sucrose in the form of fine or coarse granules, sometimes as powder after milling. Nutritionally, it provides almost exclusively energy: about 400 kcal per 100 g and nearly 100 g of carbohydrates, with no protein, fat, or significant vitamins and minerals. As a quick source of glucose, it can help provide energy in a short time and be useful in hypoglycemic states; however, it is advisable to use it in moderation due to the risk of cavities and excess calories. Sugar is essential in baking, sweetening beverages, preparing jams, caramelization, and in yeast fermentation, enhancing the flavor and structure of baked goods. It should be stored in a sealed, dry container, away from moisture and strong odors, to prevent clumping and absorption of aromas; ideally at room temperature.
