Description

Endive (Belgian endive) is a small, "torpedo-shaped" head with a compact arrangement of light yellow, crunchy leaves and a delicate, pleasantly bitter flavor with a slight nutty aftertaste. It resembles a small chicory or romaine lettuce, and the bitterness is most pronounced when consumed raw, mellowing with heat treatment. It is low in calories, rich in fiber, and contains vitamins: mainly K and folate, as well as small amounts of vitamins A and C, and minerals such as potassium and manganese; it also contains inulin, beneficial for gut flora. This supports digestion, provides a feeling of fullness, and contributes to bone health and the cardiovascular system. In the kitchen, it works great raw in salads and flavor adjustments (with citrus, nuts, blue cheese), as well as caramelized, grilled, or baked as a side dish. Store in the refrigerator in a perforated bag, in a dark, cool place, away from moisture and ethylene, and preferably use within a week.
