Description

Salted herring fillets (matjas) are young, delicate slices of herring with a velvety, slightly creamy texture and a mild, moderately salty flavor with a subtle hint of fish sweetness; the flesh is light pink to beige in color and has a smooth surface, often sold in oil, vinegar, or mild brine.
