Description
Goose is a dark red, well-marbled meat with a distinctive, slightly gamey flavor and firm texture; the skin becomes crispy when roasted, and the fat adds depth and juiciness to dishes. From a nutritional standpoint, goose is rich in protein, iron, zinc, selenium, and B vitamins, as well as monounsaturated fats; it provides a lot of energy, supports blood production and metabolism, but due to its calorie content, it should be consumed in moderation. In the kitchen, goose is suitable for roasting whole, confit, braising, and smoking, and pairs well with fruits (apples, oranges), red cabbage, potatoes, and wine-based sauces. Store raw goose in the refrigerator for 1–2 days in an airtight container or freeze for 6–12 months, thawing slowly in the refrigerator; cooked dishes remain fresh for 3–4 days.
