Description

Cloves are dried flower buds from the clove tree, small, hard, and dark brown, with a distinct spicy-sweet-bitter note and an intense, slightly peppery aroma resulting from the essential oil (primarily eugenol). In the kitchen, they are found in the form of whole buds or ground spice. They are a source of strong phytochemical compounds and antioxidants, primarily eugenol, which gives them anti-inflammatory and antibacterial properties and aids digestion and alleviates pain (e.g., toothache) when used occasionally. They also contain trace amounts of minerals. They pair well with meat dishes, one-pot meals, marinades, pickles, rice, compotes, spiced beverages, and baked goods; whole cloves are added for long cooking, ground just before use for maximum aroma. Store in an airtight container in a dry, cool, and dark place to maintain their intense fragrance.
