Dried mushrooms (boletus)
Description
Dried mushrooms (porcini) have an intense, deep, earthy, and nutty flavor with a distinct umami note, and a dark brown, slightly wrinkled appearance after drying; when soaked, they regain a meaty texture and the aroma of fresh porcini. They are low in calories, a source of plant protein, fiber, and B vitamins, as well as minerals such as potassium, phosphorus, and selenium, and contain antioxidants and beta-glucans that support immunity and metabolism. In the kitchen, dried porcini work well in risottos, soups, sauces, fillings for dumplings, and braised meat dishes, adding depth of flavor and aroma to broths. Before use, they should be soaked in warm water, which itself serves as a valuable broth. Store in an airtight, dry, and dark container, away from moisture and strong odors; under proper conditions, they retain their qualities for many months.
