Jalapeno
Description
Jalapeño is a small pepper usually measuring 4–7 cm in length, with a smooth skin ranging from light green to fully ripe red, featuring a distinct, fresh, slightly fruity aroma and a medium level of heat (about 2,500–8,000 Scoville units). Its flavor combines spiciness with a green, grassy note that gently transforms when roasted or smoked. Nutritionally, jalapeño is low in calories, rich in vitamin C, provitamin A, B vitamins, and antioxidants, while the capsaicin it contains is responsible for its warming effect and may support metabolism and have anti-inflammatory properties. In the kitchen, it adds character to salsas, tacos, marinades, cheese fillings, and sauces; it pairs well with avocado, corn, cilantro, and citrus, and roasting or removing the seeds reduces its heat. They can be stored in the refrigerator in a perforated or paper bag for 1–2 weeks, and can also be chopped and frozen or pickled to extend their shelf life.
