Fresh green peas
Description
Fresh green peas have a sweet, delicate flavor and a firm, juicy texture; the small, light green balls in pods look appetizing and add color and freshness to dishes. They are a source of fiber, plant protein, vitamins (especially vitamins C and K), and minerals such as manganese and iron, as well as antioxidants. Regular consumption of peas supports digestion, helps maintain stable blood sugar levels, and positively affects cardiovascular health. In the kitchen, fresh peas are suitable for salads, soups, risottos, pasta dishes, poultry and fish dishes, as well as for one-pot meals and appetizers with mint or butter. To preserve their flavor and nutritional value, store peas in their pods in the refrigerator in a breathable container and consume within 2–3 days, or blanch briefly and freeze for longer storage.
